Our Honey

We use our various batches to create either Wildflower Honey or Soft Set Honey, using the unique characteristics of each batch to guide our honey processing decisions. 


Incredibly, our 454g jars of honey represent: 

  • The entire working lives of around 900 bees. 
  • Over 50,000 miles of flight. 
  • Visits to over 2,000,000 flowers.

Wildflower Honey

Our Wildflower Honey is as pure as it gets, retaining the precious components of raw, natural honey. 


  • The honey is extracted by hand from the honey frames with an extractor, using centrifugal force to spin the honey out of the cells. 
  • It flows through a fine-medium filter (350 micron), which strains out the larger pieces of wax but allows the pollen to remain. 
  • It is warmed to hive temperature and decanted into honey jars.

Soft Set Honey

Our Soft Set Honey can also be considered a raw product, with just a couple more steps in the processing to achieve its almost fudge-like consistency, making it perfect for spreading on toast. We use Oilseed Rape honey for our Soft Set, as it has a tendency to crystallise quickly and does not require heating beyond hive temperature, which retains its natural properties. 


  • Soft Set Honey is extracted from the frames in the same way as our Wildflower Honey. 
  • After straining through a fine-medium filter (350 micron), the honey is allowed to settle in a tank until it crystallises. 
  • The tank is then brought back up to hive temperature, and the honey is churned every 12 hours for three days.
  • Following this, it is warmed to hive temperature once again, decanted into jars, and left in a cool place to set.
